The Fortune Money Bag features delicately crafted dumplings shaped like traditional prosperity pouches, filled with crab, scallop, and water chestnut, and served on a spicy chilli sauce to awaken the palate. The Wok-Fried Tiger Prawn brings a vibrant balance of texture and flavour, pairing crisp prawns with red plum, pickled radish, and sweet potato, finished in a fragrant red osmanthus sauce. At the heart of the offering, the Brown Jasmine Rice is presented in a six-petal floral arrangement, symbolising harmony and completeness. It is accompanied by smoked roasted duck, seasonal vegetables, egg floss, and crisp soybean crumb segments, inviting guests to share from the centre of the table. To conclude, the Golden Stallion dessert serves as a visual and symbolic finale. Layers of banana cake, vanilla mousse, salted caramel, and banana creamux are coated in auspicious red cocoa butter and crowned with a golden chocolate horseshoe and coin.
